Reproduction Steps

• Stop server
• edit from default to custom and set “enableDurability”: false,
• Save and restart server
• config file reverts to “gameSettingsPreset”: “Default”, and “enableDurability”: true,

if i recall correctly, you cannot just edit the json file. it has to be done through the Configuration→Enshrouded Menu. You need to set Game Settings Preset to Custom for any game settings to take effect. it took me a little bit to realize this.
